Crust Ingredients
½ cup caster sugar
120g butter
2 eggs
2 cups plain flour
2tspn baking powder
Custard Ingredients
4.5 cups full cream milk
3 eggs
1 cup sugar
2 Tbspn flour
2 Tbspn corn flour
2-3 Tbspn butter
2 tspn vanilla bean paste
Cinnamon for dusting
Crust Method
13. Preheat oven to 200C
14. Cream butter and sugar well
15. Add egg and combine well
16. Sift in all dry ingredients. Combine.
17. Knead + rest in fridge + roll
18. Press into tin
19. Bake for 20mins or until golden
20. Allow to cool
Custard Method
1. Bring milk to boil. Take off heat.
2. Combine eggs & all dry ingredients well.
3. Add half hot milk to egg mix while beating
4. Return all milk and egg mix to stove
5. Stir until thick
6. Add butter and vanilla. Combine.
7. Take off heat
8. Pour into pie shell and cool slightly
9. Add cinnamon and allow to set in fridge.
