Quite possibly the best Cream of Tomato soup I have ever made - if not the best soup of all time!!
CREAM OF TOMATO SOUP RECIPE FOR 1KG OF RIPE TOMATOES
Prep: 10 Min Cooking: 45 Min
INGREDIENTS
1 onion, chopped
1TBSP cooking oil
25g butter
1TBSP tomato purée (or 1tbsp tomato purée with garlic and omit the garlic clove below)
1 clove garlic, crushed
1tsp paprika
1kg tomatoes, chopped
2tsp sugar
1 bay leaf
1 vegetable stock cube (I used a Knorr vegetable stockpot)
142ml double cream (small pot in the UK)
METHOD
• Fry the onion in the butter for 8-10 mins until softened. Stir in the garlic and paprika and cook for 1 minute. Add the tomato purée and continue for 2 mins more.
• Add the chopped tomatoes, sugar, bay leaf and vegetable stock cube. Bring the soup to a boil then simmer for 20-30 mins or until the tomatoes have almost liquidised.
• Remove the bay leaf if you can find it!
• Blend the soup in batches in a food processor or blender until smooth or use a hand held blitzer. Push through a sieve to remove any skin or seeds and return the liquid to the rinsed-out pan.
• Stir the double cream and reheat the soup gently. Once it’s hot, serve your tomato soup immediately in warmed bowls with a swirl of the remaining cream and a garnish of basil leaves.
• Or freeze for later use – it should keep for 4-5 months if you can resist eating it!
