Recipe:-
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Ingredients:-
FOR BADI / GATTE / GRAM FLOUR DUMPLINGS:
¾ cup besan / gram flour
½ tsp ajwain / carom seeds
½ tsp cumin / jeera
½ tsp kashmiri red chilli powder
½ tsp garam masala
pinch of hing / asafoetida
1 tbsp oil
2 tbsp water
salt to taste
FOR SABZI:
1 bunch spring onion, chopped
1 tbsp oil
½ tsp cumin
1 inch ginger, crushed
6 pod garlic, finely chopped
¼ tsp turmeric powder
½ tsp red chilli powder
½ tsp coriander powder
Salt to taste
Sliced green chillies for garnish (optional)
Method:-
● Firstly, in a large bowl take 1 cup besan, 2 tbsp oil, ½ tsp coriander powder, ½ tsp ajwain, ½ tsp cumin, ½ tsp turmeric powder, 1 tsp red chilli powder, pinch of hing
● Now add water as required and knead the dough for gatte.
● Roll the dough gently to make cylindrical roles and cut it to about 3 cms for gatte.
● Then, in a large kadai heat sufficient amount of oil to fry gatte .Fry the gatte till it turns crispy and golden brown.
● Now take 1 tbsp oil in a kadai and add ½ tsp cumin / jeera ,1 inch ginger, 6 pod garlic and tops of spring onion. Saute for 2 minutes.
● Further, ¼ tsp turmeric and ½ tsp kashmiri red chilli powder and ½ tsp coriander powder
● Furthermore, add chopped spring onion, salt and saute it for a minute.
● Now add prepared gatte (gram flour dumplings) and half cup water.
● Cover and boil for 5 minutes.
● Finally, serve pyaaz badi ki sabji with roti, phulka or paratha.
